HOW SOON AFTER TREE REMOVAL?
If you just had a tree cut down, you can have the stump ground immediately—no waiting period required. The tree doesn't need to "cure" or dry out. In fact, fresher stumps are sometimes slightly easier to grind than old, dried-out ones.
That said, if you're in no rush, there's also no harm in waiting. Stumps don't get significantly harder or more difficult to grind over time (though very old, petrified stumps can be tougher).
